Cake with Dried Fruit
Fruit cakes are heavy, dense cakes that have relatively low flour content and contain lots of mixed dried fruit.
These luscious pastries cannot leave indifferent even those who do not like dried fruit.
Preparation time: 1 hour 30 minutes.
The recipe is well suited for: dessert.
1/2 lb. (224grams) butter
1/2 lb. (224grams)
1 3/4 cups (224grams) cake flour
2 tsp. baking powder
2 tsp vanilla
2 tsp almond extract
4 egg whites
1/4 cup of dried apricots
1/4 cup of prunes
1/4 cup of nuts
1/4 cup of raisins
First soaked dried fruits in hot water leave for 15 minutes. This will give them the softness.
Meanwhile, cut into cubes butter triturated with sugar. Divide into the same bowl of eggs, interfere. Move aside the resulting mixture.
Wash dried fruits and cut into small cubes (except raisins, of course). And just grind nuts way you want. For example, I use a rolling pin.
Add dried fruit and nuts in a bowl with the dough. Sift flour with baking powder and knead the dough. It should turn out as a very thick cream! Do not overdo it with the flour!
Bake for 1 hour or so at 325°F.
