Semolina pudding with caramel, nuts and dried fruit
Halawa is a traditional Indian sweet, which is similar to a sweet crumbly pudding. Prepare it from cereals, vegetables, fruits, seeds, and various legumes. The most popular Halawa is Semolina Halawa with the addition of sugar syrup, nuts and dried fruit.

Milk 350 ml
sugar 150 g
Semolina 110 g
Cardamom 2 pcs.
Nutmeg powder 4 g
Cinnamon 4 g
For the preparation need: milk, sugar, butter, semolina, nuts (hazelnuts, or any other), raisins and spices (cardamom, cinnamon, nutmeg).
Prepare the ingredients in advance. Take a pinch of cinnamon, grind the cardamom and the nutmeg.
Dry the nuts in a frying pan and chop.
Melt the butter In a saucepan.
Add a semolina and, stirring occasionally, cook over medium heat for 12-15 minutes.
Put the sugar in another pan, cook on medium heat and stir occasionally (do not add water). After 3-6 minutes, the sugar turns into caramel.
Now very carefully (the mixture may hiss and foam) add the milk in small portions, stirring the caramel. Add the spices and keep on the heat for a few minutes.
Add raisins, nuts in the semolina and mix. Keep heat for 5 minutes.
Then pour the milk caramel in the semolina and stir. Cover and leave for 5 minutes.
Turn the heat off. Halawa is ready. Serve warm.
