Chicken vegetable and rice soup
We like easy diet soup with chicken and rice. It is not used fried. Only boiled chicken with onions and carrots. I do not use the spices (bay leaf, pepper, etc.), so as not to “clog” the unique taste of chicken broth.
In this dish add dill is preferable. Soup can be served to the table at once. Do not add more rice than writed in the recipe.
Preparation time: 1 hour 50 minutes.
Chicken vegetable and rice soup is the best recipe! The dish is well suited for: lunch.
Servings: 6 pcs.
Ingredients for soup:
rice 90 g
Onion 1 pc.
Carrot 1 pieces.
Potatoes 3 pc.
water 1.7 ml
dried dill 5 g
Salt 1 tsp.
Wash the chicken. Peel the carrots. And also to prepare rice, dried dill and potatoes.
Add chicken, onion and carrots in a saucepan, cover with cold water. Salt. Bring to a boil, reduce heat and simmer for 50 minutes.
Potatoes peeled and cut into medium-sized slices about the same size.
When the chicken is cooked and the broth is ready, remove the meat and vegetables on a plate. Put the potatoes in the hot broth, bring to a boil. Put the washed rice. Again, bring to a boil and cook over low heat until cooked potatoes and rice (about 25 minutes).
Cut up cooked carrots finely.
Remove the chicken meat from the bones and also finely chopped. I do not use boiled onions further.
Place the chopped vegetables and meat back into the pan pa 5 minutes until end. Season with salt, if needed. Bring to a boil and season with dill.
