Ingredients:

Cottage cheese 300 g
Butter 250g
Wheat flour 3.5 tbsp.
Sugar 250 g
Chicken eggs 4
80g raisins
Lemon 1 pc.
Baking powder 1 tsp.
Powdered sugar 30 g

Preparation:

Mix the room temperature butter and sugar, leaving 0.5 cups of sugar for whipping whites.

Grate the lemon zest.

Separate the whites from the yolks.

Enter the egg yolks in a mixture of sugar and butter, and mix thoroughly.

Add the cottage cheese, zest, and baking powder, juice of half a lemon. Mix all together.

Then add the raisins and flour. Add flour gradually to knead the dough well.

Beat the whites and 0.5 cups of sugar in a solid foam.

Add the beaten egg whites into the batter and mix gently.

Grease the baking dish with butter and put the dough in it.

Bake in the preheated ovento 180 ° C ( 356 F )  until the edges begin to pull away from the sides of the pan, and a toothpick inserted into the center comes out dry, about 70 -90  minutes.

Ready cake sprinkled with powdered sugar.
