Creamy Celery and Zucchini Soup
Celery can be used both fresh and fried, stewed or boiled, combining with other vegetables. Broth, cooked with a celery root, gets more intense and pleasant taste and flavor, and the Creamy Celery and Zucchini Soup – it’s just a feast for the senses and the stomach.
Generally creamy soups are very tasty and easy to digest, especially if they contain a lot of vegetables and cooked in water or a chicken stock. To evenly-cooked vegetables, they are cuted into equal slices. Serve creamy soup with croutons.

Ingredients for soup:
Zucchini 2 pcs.
Celery 300 g
Onion 1 pc.
1 garlic clove
Chicken broth 700 ml
Cream 200 ml
Butter 10 g
Curry 2 tsp.
Ground black pepper 1 pinch
Salt to taste
To prepare the soup to take the zucchini, celery, onions, garlic. Chicken broth previously well warmed. Cream is better to take 20-30% of the fat content.
Peel onion, celery, garlic and chop. Wash 2 small zucchini wash and chop too.
Melt the butter in a saucepan.
Add the onion and garlic – fry all 5-7 minutes, onions should be transparent.
Add celery and zucchini and fry another 5 minutes.
Add the broth and bring to a boil – cook for 3-4 minutes.
Remove from heat, pour the cream, add the black pepper and salt to taste.
Grind everything in a blender until creamy.
Pour the soup into a pan, add curry and cook, not boiling. Serve with croutons.
