Curry Chicken and Rice
Preparation time: 45 minutes.
The recipe is well suited for: dinner.
– 4 chicken breast fillets
– 1 large onion
– A small piece of fresh ginger
– 3-4 garlic cloves
– 1 teaspoon curry
– 1 teaspoon ground coriander
– 1/4 teaspoon ground cinnamon
– 1 cup of rice
– 2 1/2 cups chicken stock or water
– Salt to taste
Сut fillets into small pieces . Chop onion, garlic and ginger .
Preheat the 2 tablespoons of vegetable oil in a saucepan and fry chicken until golden brown about 5-6 minutes. Place fillets to a plate.
Reduce heat to medium , place the onion and fry , stirring occasionally, 5 minutes.
Add the ginger , garlic and spices and fry , stirring, for 1 minute.
Put the rice in a saucepan and stir.
Pour water or broth and add salt to taste.
Bring to a boil , reduce heat to low , cover , and simmer until the rice is tender, about 15 minutes, and all the liquid is absorbed.
Add fried fillet in a saucepan and simmer about 5-7 minutes.
Serve the dish hot , sprinkled with chopped fresh herbs.
