Easy ratatouille recipe
Ratatouille is a French vegetable dish, which has even become a “hero” of the world famous cartoon. The name comes from the words «rata» – food and «touiller» – disturb, stir.
Ratatouille recipe is one of the variants of vegetable dishes, as the sauté and the vegetable stew … Usually ratatouille contains zucchini, peppers, eggplant, tomatoes, onions and garlic and, of course, Mediterranean herbs, creating a wonderful flavor.
For eight servings:
2 onion, sliced into thin rings
3 cloves garlic, minced
1 medium eggplant, cubed
2 zucchini, cubed
2 medium yellow squash, cubed
2 green bell peppers, seeded and cubed
1 yellow bell pepper, diced
1 chopped red bell pepper
4 roma (plum) tomatoes, chopped
1/2 cup olive oil
1 bay leaf
2 tablespoons chopped fresh parsley
4 sprigs fresh thyme
Salt and pepper to taste
Slice the eggplant and zucchini slices. Put them in a different dish and sprinkle with flour.
Slice the onion and bell pepper strips.
Pour the oil in a large skillet. Fry the onions until golden, add the vegetables and herbs, salt and pepper. Mix well. Add the bay leaf and thyme and cover the pan.
Cook over medium heat for 15 to 20 minutes.
Add the chopped tomatoes and parsley in a large saucepan, cook for 10-15 minutes. Stir.
