Our favorite and easy blueberry muffin recipe
Blueberry muffins are one of the most popular in the world and loved in our family. These muffins are made from whole wheat (whole meal) flour with a little sugar and filled with delicious blueberries, rich in vitamins and antioxidants. These muffins with fresh or frozen blueberries will be ready in just half an hour. They are sweet and literally melt in your mouth.
Preparation time: 45 minutes.
The recipe is well suited for: breakfast.
2 1/2 cups flour
3 teaspoons baking powder
1 tsp ground cinnamon
3/4 cup brown sugar
1 1/2 cups yogurt
2 eggs, lightly beaten
2 tbsp vegetable oil
2 cups blueberries, you can take the strawberries or raspberries.
Preheat oven to 180-200 degrees C (350-400 degrees F) and prepare muffin cups.
Combine the flour with the cinnamon in a bowl, add back sugar, stir and make an indentation in the center of the bowl. Mix yogurt, eggs, vegetable oil in another bowl and pour into the center of flour. Mix the mixture lightly with a wooden spoon, add the berries and mix again.
Fill muffin cups right to the top, and sprinkle with crumb topping mixture and bake in the oven for about 30 minutes.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
