Ingredients:

2 tangerines

3/4 cups dried fruits

2/3 cups butter

3/4 cups sugar

2 tablespoons butter for fry

1 tsp baking powder

1 cup flour

 

Preparation:

Peel tangerines and put slices to dry for an hour. Remove from the refrigerator butter and eggs, so they warmed up. Soak the dried fruits in 2 tablespoons orange liqueur.

Heat 2 tablespoons butter in a pan, sprinkle a teaspoon of sugar and fry the tangerine slices (during 2 minutes on each side).

Remove hot slices to cool down and the put dried fruits in the pan and heat until the liquor evaporates.

Whisk butter and sugar. It takes 3-5 minutes.

One by one, add three eggs, again whisk.

Add flour with baking powder and the dried fruit.  If the dough is watery, you just add flour again.

Pour batter into a greased and floured form, shifting caramelized mandarins.

Quick Christmas cake

Bake at 180C (360 F) for about an hour, check the readiness of a match (it should dry out of the middle of the cake). Sprinkle cake with powdered sugar.
