Savory muffins with goat cheese
Muffins with goat cheese are an easy breakfast or snack. You can vary the ingredients as desired, or use what’s left in the fridge: fried chicken, smoked fish, bacon and cheese. You can also add any leftover roasted vegetables. Even wheat flour can be mixed with corn flour.
The dimensions of this baking may also be different. You can bake in silicone muffin forms – portions, convenient to take on a picnic.
Preparation time: 45 minutes.

4 tbsp olive oil;
200 gr. wheat flour;
1.5 tsp baking powder;
0.5 tsp salts;
0.5 tsp pepper;
100 g. hard goat cheese or parmesan, grated;
2 tbsp parsley, finely chopped;
100 g. yogurt;
150 g soft goat cheese, cut into small pieces;
60 g hazelnuts lightly toasted and coarsely chopped enough;
Preheat oven to 200 C (400 F). Lightly grease 8 holes of a muffin pan.
In a bowl, combine flour, baking powder dough, salt and pepper. Add the grated hard cheese and parsley.
In another bowl, mix the eggs, yoghurt and 4 tbsp olive oil. Pour the liquid ingredients to the flour and mix gently until homogenous. Now add the soft goat cheese, raisins and nuts.
Pour the mixture into a small or a few shapes and bake 12-15 minutes.
You can check the readiness with a wooden toothpick.
Turn out onto a rack to cool slightly. Serve warm.
